Meet the Chefs
Dan Cuss has shaped his cooking around nature and wherever his knife roll lands. From working in Michelin environments, high end chalets in the Alps, boutique hotels in South Africa and on adventurous sailing yachts. He finds inspiration in these experiences, utilising methods and techniques from all over the world. Previously forming The Herb Kitchen and Curing Rebels, Dan has been involved in some inspiring local businesses with sustainability at the fore front of every endeavour.
Having lived in Sussex on and off for over 20 years, his love for the local terroir has also helped form his cooking which is innovative, focused and memorable.
With over 30 years in the kitchen, Simon’s cooking has been shaped by a lifelong curiosity for food, nature and the places he has travelled. His experience spans a wide range of kitchens and environments around the world, working at many different levels and bringing together techniques, ingredients and influences from across the globe.
A strong connection to the natural world is at the heart of his approach. Foraging, fermenting, pickling and traditional forms of food preservation are an important part of his cooking, allowing him to work closely with the seasons and make the most of what is available locally.
Having lived in Sussex for many years, Simon’s cooking is increasingly rooted in the landscape and produce of the region. He is also the owner of Farbridge, a renowned Sussex wedding venue, where his passion for food, hospitality and creating memorable experiences come together.
Simon makes our fresh bread every Saturday and cooks for us on Meet the Makers Day at Makers Barn.
